Our pasta is the result of the best organic Sicilian wheat, carefully selected and processed with artisan methods according to our traditional recipes.
Through gradual milling and the production of pasta within 24 hours, using pure Etna water, bronze drawing and low-temperature drying, our pasta holds its nutritional properties and the unmistakable and authentic fragrance of quality wheat intact.

ORGANIC SICILIAN DURUM WHEAT
Produced from organic Sicilian durum wheat and pure water from Mount Etna, the pasta is bronze-drawn and dried for 8-14 hours at low temperature (50°-65°C) to conserve the organoleptic qualities of the flour and the typical aroma of artisan pasta, with its unmistakable roughness and rugosity.
ANCIENT ORGANIC SICILIAN GRAINS
Made with various types of organic Sicilian ancient grain and ancient cereals. A traditional wholegrain milling process brings out the best of the richness, keeping the nutritional properties and the balance between starch and gluten intact, making it a product that is lighter and easier to digest.
ANCIENT ORGANIC SICILIAN GRAINS & RICE/LEGUMES
Produced with ancient varieties of Sicilian grains & rice and ancient Sicilian grains & legumes. A product with a low gluten index, lighter and balanced, which contributes to restoring well-being and the body’s natural harmony.
