Scuma is a traditional shape of the Sicilian tradition, mentioned in the Monzù recipe books. Best known as “Capellini” it owes its name to its extremely light texture, similar to sea foam. In order to dry it properly, great expertise and patience are needed: for preventing its extremely thin threads from sticking together, they need to be dried with a blow of air and at very low temperature, just like we have been doing for generations. It is an ancient art we are proud of, allowing us to bring the History, culture and beauty of our land to your table.
